This South African Rooibos Recipe makes a great apricot muffin with the smoky flavor of Rooibos creating a different taste sensation.
Rooibos Apricot Muffin Ingredients
1¼ cups [300ml] Dried Apricots
2 cups [450ml] water
6 Rooibos Teabags
2½ cups [600ml] Cake Flour
1½ cup [375ml] sugar
1 tsp [5ml] salt
2 Tbsp [30ml] Baking powder
2½ cups [600ml] Oat Bran
5 Tbsp [75ml] Apricot Jam
3 oz [90g] Margarine
3 medium eggs
little butter for greasing
Making the Rooibos Muffins
Pour the water into a saucepan add the Rooibos Teabags and bring to the boil over medium heat, remove from the heat immediately.
Allow to brew for 5 minutes
Remove the teabags, squeezing gently [careful they're still hot] to return any moisture back to the saucepan.
Chop the dried apricots finely, add to the warm Rooibos tea and allow to soak for 20 minutes
In the meantime:-
Sift the cake flour, sugar, salt and baking powder together into a large mixing bowl
Add the oat bran stirring to ensure it is well combined with the flour/sugar mixture
Place the jam and Margarine [should be low fat] in a small saucepan and melt over medium heat, stirring to ensure the jam doesn't stick to the bottom and burn, remove from the heat and cool
Preheat the oven to 380
oF [200
oC]
Whisk the eggs lightly and add to the cooled margarine/jam mixture
Add the eggs/margarine mixture to the
Rooibos and apricots, stirring as you do so
Pour the Rooibos and apricot mixture into the dry ingredients, stirring to mix as you do
Mix the batter lightly to ensure even distribution of the apricots
Grease the hollows of 2 twelve hole muffin tins with the butter
Pour the Rooibos batter into the muffin holes so that each depression is ⅔ full
Place the muffin tins in the oven and bake for 20 minutes
Remove the
Rooibos and Apricot muffins from the oven and allow to cool slightly before turning out onto a wire rack to complete cooling
