These South African Mealie Pap Recipes from Africhef are an example of the fact that
Rooibos Tea may be used in most recipes in place of water or milk.
In fact Rooibos may also be infused in milk in some cases where substituting Rooibos Tea into the recipe would be inappropriate
Rooibos Slappap Recipe
[ Slappap is the generic name for Soft Maize Porridge in South Africa ]
Slappap Ingredients
4 cups [1 litre] water
5 Rooibos Tea Bags
1 tsp salt
1 cup mealie meal [maize meal]
1 tbsp butter
Making Rooibos Slappap
Add the water and Rooibos teabags to a large heavy bottomed saucepan.
Bring to the boil and allow to infuse for 15 minutes
Remove the teabags and return the mixture to the boil
Add the salt and slowly add the mealie meal
Stir thoroughly and whisk for a few minutes until smooth and free of lumps Simmer for 15-18 minutes stirring occasionally.
Add the butter, strirring before you serve
Rooibos slappap can be served with honey, sugar and/or milk depending on your taste. You may also add sliced bananas or strawberries.
Adding Rooibos Tea to this recipe for your mealie meal breakfast could significantly incease its health benefits.
Depending on your taste you may find you want to increase or decrease the amount of Rooibos teabags used and/or increase or decrease the infusion time.
Of course, if you just want the traditional South African slappap leave out the Rooibos teabags

Rooibos Stywepap Recipe
[Rooibos Stiff Maize Porridge]
As the name implies this is a very thick porridge, it will not pour and is, for example, somewhat thicker than mashed potatoes.
Stywepap Ingredients
4 cups [1 litre] water
5 Rooibos Teabags
2 tsp salt
3 cups mealie meal [maize meal]
Making Rooibos Stywepap
Add the water and
Rooibos teabags to a large heavy bottomed saucepan, bring to the boil and allow to infuse for 15 minutes
Remove the teabags and bring liquid back to the boil
Add the salt and then add the mealie meal.
Do not stir
Cover the saucepan and simmer for 15 minutes
Remove cover and stir maize meal into the water using a cutting motion
Cover and simmer for a further 25-30 minutes
You should end up with a stiff porridge which may be served as an starch accompaniment to a meat or poultry dish
Stywepap is also popular at South African Braais and is often served in the place of rice and/or potato.
The addition of
Rooibos to the recipe for stywepap
creates an uniquely flavorsome porridge/starch
In South Africa Stywepap is often served on its own as a meal, with a tomato and onion relish or gravy
Serves 4-6
Rooibos Recipe for Krummelpap
[Crumbly Maize Meal]
Krummelpap Ingredients
3 cups [750ml] water
5 Rooibos Teabags
10ml salt
4 cups mealie meal [maize meal]
To make Rooibos Krummelpap
Add the water and
Rooibos teabags to a large heavy bottomed saucepan, bring to the boil and allow to infuse for 15 minutes
Remove the teabags and return the mixture to the boil
Add the salt and
slowly add the mealie meal, to the Rooibos infusion, in such a way that it piles up in the center
Do not stir
Cover and simmer for 15 minutes
Remove the cover and stir with a fork [preferably a braai fork with well separated tines] until it crumbles
Cover and simmer for another 25 minutes when the maize porridge should be crumbly.
Kummelpap is often served at South African Braais,
the addition of Rooibos to the Krummelpap Recipe gives it somewhat different taste which goes down well with braaivleis.
Serves 4-6 depending on the hunger index
The addition of Rooibos to the recipe gives all the above paps
[porridges] a different and pleasing color
As with all recipes where a flavoring agent is used
the number of Rooibos teabags used and the length of infusion may be adjusted to individual tastes in all the above recipes
If you just want the normal South African stywe or krummelpap all you need to do is omit the Rooibos teabags from the recipes
