These South African Rooibos Recipes combine the traditional Baked Apple and Poached Pear Recipes with healthy Rooibos Tea leading to a new and excitingly different flavor
Rooibos Poached Pear Recipe
These poached pears form a delicious dessert, sure to delight even the most discerning palate
Ingredients
4 cups [1litre] water
6 Rooibos Teabags
6 medium ripe pears
½ cup frozen apple juice
¼ cup sultanas
1 vanilla bean
1 inch [2½cm ] whole cinnamon stick
¾ cup sliced, toasted almonds [optional]
Making the Rooibos Poached Pears
Pour the water into a saucepan and add the Rooibos teabags, bring to the boil and simmer for 5 minutes
Remove from the heat and allow the Rooibos to infuse for 15 minutes, thereafter remove and discard the teabags
Peel pears, leaving stems on
Split the vanila bean lengthways
In a medium size pan, heat the Rooibos infusion, frozen concentrated orange juice, vanilla bean, and cinnamon stick to a simmer. Add pears.
Simmer 25 to 30 minutes, uncovered, turning pears occasionally, until tender when pierced with a knife.
Remove the poached pears with a slotted spoon.
Strain the syrup, removing the vanilla bean and cinnamon stick
Stir in raisins and cool syrup, and pears to room temperature.
Serve pears in small glass compote bowls.
Spoon raisins and syrup over and around poached pears.
Garnish with toasted almonds, if using

Rooibos Baked Apple Recipe
This old time favorite is enhanced by the addition of healthy Rooibos Tea... Interestingly enough this simple recipe is quite old it was given to me 20 or 30 years ago.
Baked Apple Ingredients
1 cup [250ml] water
1 Rooibos Teabag
6 large sour [cooking] apples
½lb [250g] Soft brown or Demerara sugar
12 cloves [you can reduce this to 1 per apple or use ¼tsp (2½ml) ground cloves instead]
1 tsp [5ml] cinnamon
2 tbsp [30ml] butter, I suppose you could use margarine if you must, especially if you're on a health kick
To make the Rooibos Baked Apples
Pour the water into a small saucepan add the
Rooibos Teabags and bring to the boil. Reduce the heat and simmer for 5 minutes.
Remove from the heat. Allow the Rooibos to infuse for 10 minutes. Remove the teabag squeezing to ensure all moisture is retained. Discard the teabag
Heat the oven to 350
oF [180
oC]
Core the Apples, do NOT peel
Mix the sugar, cinnamon and ground cloves, [if you're using ground and not whole] in a small mixing bowl.
Spray a baking dish lightly with non-stick vegetable spray.
Place the cored apples on the baking dish and stuff with the sugar/cinnamon mixture adding 2 cloves to each apple [if you're not using the ground version]
Dot the apples with the butter and pour the
Rooibos into the dish
Bake for +/- 25 minutes until the apples are very soft, you need to baste occasionally with the Rooibos tea
