Baking recipes often call for small quantities of liquid. When using Rooibos Infusions in these recipes it is often better to prepare a cupful of
Rooibos Tea, using the following method...
Place 2 Rooibos Teabags in a cupful [250ml] of boiling water and allow to infuse for 12 minutes.
Remove the teabags, squeezing to ensure all liquid is returned to the cup.
You can refigerate any leftover liquid for later use...
Alternatively, and this is the method I prefer, you can drink the
Rooibos Tea immediately as a delicious and healthy drink after removing the amount required.
You can drink it as is or add any of milk, honey, condensed milk, sugar in combination or singly... Lovely...
Note: Rooibos prepared in this way may be too strong for your taste, in which case you can dilute it by adding more hot water.
Rooibos Banana Carrot Bread Ingredients
2 bananas
1 cup [250ml] whole wheat flour
2 tsp [10ml] baking powder
1 tsp [5ml] bicarb
2 Eggs
4 oz [120ml] oil
2 Tbsp [30ml] Rooibos Tea
4 oz [110g] soft brown sugar
1 cup [250ml] grated carrots [ use the finest grater you have]
½ cup [ 125ml] sultanas or raisins [must be seedless]
½ cup [125ml] walnuts or pecan nuts
¼ cup [60ml] pitted dates
A little butter for greasing
Making the Banana and Carrot Bread
Preheat oven to 350
oF [180
oC
Mash the bananas
Sift the flour, baking powder and bicarb together.
In a large mixing bowl lightly whisk the eggs
Whisk in the oil and
Rooibos Tea
Add the sugar and whisk together untill the mixture is creamy
Stir in the flour, alternating with the bananas, carrots, raisins [or sultanas] walnuts and dates ensuring that the mixture is thoroughly combined
Lightly grease a loaf tin with the butter and pour the mixture in it
Bake for +/- 35 minutes or until a toothpick or cake tester comes out clean
Remove the Rooibos Banana and Carrot Bread from the oven and turn out onto a wire rack to cool [wait a few minutes before doing this]
You can either serve slices warm or cold, buttered or not as you prefer
I'm not actually sure whether I should call this delightful South
African Rooibos Banana and Carrot Bread a bread or a cake, it's so delicious
If you really wanted to ring the changes you could ice it with a normal butter icing, using the Rooibos Tea in place of any liquid the recipe called for [except oil of course]
