Angel Hair Pasta

with Roasted Peppers and Sun Dried Tomatoes


INGREDIENTS

500g (1lb) angel hair pasta or vermicelli
(cooked as per the instructions on the Cooking Pasta page)

2 tablespoons butter
2 tablespoons olive oil
¼ cup chopped fresh basil leaves
¼ cup chopped fresh parsley + extra
4 cloves garlic – finely chopped
3 capsicum (Bell peppers) 1 each - red, green, yellow
roasted (see below)
10 – 12 sun-dried tomatoes, chopped
½ cup shaved parmesan cheese
Sea salt & freshly ground black pepper to taste

METHOD

While the pasta is cooking, place butter and oil into saucepan and heat until butter is melted.
Add all remaining ingredients except parmesan cheese and extra chopped parsley.
Simmer for a few minutes whilst stirring to combine.
Add to drained pasta and toss well to mix.
Serve topped with parmesan cheese and a little chopped parsley.

Tip on Roasting Capiscums (Peppers) Blacken peppers under the grill or in a gas flame. Place in plastic bag to cool and then peel off blackened skin and remove seeds.
