This
Banana bread recipe is basically similar to the recipe for All-Bran Banana Bread.
The difference being that the quantity of All-Bran cereal is reduced somewhat
This reduction of All-Bran is made up with the addition of chopped nuts, preferably walnuts although pecan nuts are acceptable
INGREDIENTS
3 large bananas (approx)
2 eggs
1 ½ cups All-Bran cereal
2 cups flour
¾ cup granulated sugar
½ cup butter or shortening
½ cup chopped nuts
1 tsp baking powder
½ tsp salt
METHOD
Preheat oven to 350F (180C)
Peel and mash the bananas, you need to end up with 1 ½ cups.
Soften the butter
Break the eggs into a bowl and beat well
Sift together the flour, baking powder and salt.
Combine the All-Bran and mashed bananas in a separate bowl and let this mixture stand for approx 5 minutes.
Cream the butter and sugar together
Fold in the eggs and then the banana/cereal mixture. Beat well.
Stir in the sifted flour and the chopped nuts.
Mix until the flour and nuts are evenly distributed through the mixture
Grease a 9X5X3 loaf pan and spoon in the mixture.
Place in the preheated oven and bake the banana bread for 60 minutes.
It is done when a toothpick inserted in the middle comes out clean.
Remove the banana bread from the oven and allow to cool slightly in the loaf tin.
Turn out onto a rack to complete cooling.
Slice and serve the
All Bran banana nut bread with butter.
The nutty flavor of this bread will be enhanced if you also spread honey on the banana bread slices.
