OATMEAL AND RAISIN COOKIESThese tasty Oatmeal and Raisin Cookies are well suited to a diabetic diet. They are relatively easy to make.
INGREDIENTS
2 eggs
1 cup rolled oats
1 cup raisins
1 cup unsweetened applesauce
1 sm. can pineapple, crushed (natural & drained)
1/2 cup vegetable oil
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. soda
1 tsp. liquid sweetener
1/2 tsp. Cloves
1/2 tsp. salt
METHOD
Preheat oven to 350 degrees
Mix all the dry ingredients together ensuring that they are evenly distributed.
Add the remaining ingredients, mixing well until a paste is formed.
Drop by teaspoon or tablespoon onto greased cookie sheets.
Bake for approx. 5-10 min. These oatmeal raisin cookies bake fast, and the time taken also depends on whether you have made teaspoon or tablespoon sized cookies so test by pressing.
These cookies should be refrigerated in an airtight container if you are going to keep them for more than 2 days.
2 or 3 small oatmeal and raisin cookies = 1 bread exchange. 1 or 2 larger oatmeal and raisin cookies = 1 bread exchange |
