This is a very easy
diabetic friendly recipe for a beef stew in the Italian manner
Recipe Ingredients
Nonstick cooking spray
1lb [450g] beef round steak [rump steak]
2 c sliced fresh mushrooms
1 cup chopped onion
1 cup chopped green pepper
½ cup chopped celery
2 cloves garlic, minced
1 14½ ounce [425g] can diced tomatoes
½ tsp dried basil, crushed
¼ tsp dried oregano, crushed
⅛ tsp crushed red pepper
2 tblsp grated Parmesan cheese
To make the Beef Stew
Remove as much fat as possible from the steak then cut meat into 4 approximately equal pieces.
Spray a large skillet with nonstick spray.
Note: The skillet should be cold:
Add steaks to the skillet; and brown both sides of the steaks.
Remove meat from skillet.
Add mushrooms, onion, green pepper, celery, and garlic to the skillet.
Cook until vegetables are nearly tender. Then, stir in undrained tomatoes, basil, oregano and red pepper.
Add steaks to skillet, spooning tomato/mushroom mixture over the meat.
Cover and simmer, stirring occasionally, for about 1¼ hours or until steaks are tender.
Place meat individual serving plates and spoon over the vegetable mixture
Sprinkle with Parmesan cheese.
This
Diabetic Friendly Italian Beef Stew is equally delicious on it's own, or for a more substantial meal, it may be served with pasta, which last I don't think is really neccessary.
