This is a very easy
diabetic friendly recipe for an Apple Pork Fillet [Tenderloin] with a delicious Cinnamon flavor
Recipe Ingredients
1 lb [450g] pork fillet [ tenderloin ]
2 apples
2 tblsp cornstarch
2 tblsp raisins
1 tsp ground cinnamon
To make the APPLE PORK
Preheat the oven to 400
oF [200
oC].
Peel and core the apple, slice relatively thinly
Place the pork tenderloin in a casserole dish.
Place the apples, cornstarch, raisins and ground cinnamon in a bowl and stir to combine.
NOTE: I know some people don't like combining raisins with apple in which case you may leave them out
Spoon the apple mixture around the pork tenderloin [Not on top of it]. Cover and bake for 40 minutes.
Uncover the casserole dish and spoon the apple mixture over the pork fillet [ tenderloin ].
Return the casserole dish to the oven and bake for another 15-20 minutes longer until the pork fillet [ tenderloin ] is nicely browned and thoroughly cooked.
