1 cup unsalted butter at room temperature.
1 cup light brown sugar.
1/2 cup dark brown sugar.
3/4 teaspoons vanilla (optional)
1 egg
1/8 teaspoons salt
1 1/2 cup unbleached all purpose flour.
2 cups semisweet chocolate, cut into course chunks.
Method:
Preheat the oven to 400°F.
Line 2 baking sheets with parchment paper.
Cream the butter and both sugars until very well blended.
Mix in the vanilla and egg, then fold in the salt, flour and chocolate chunks.
For into small walnut sized balls.
Place on the baking sheets and press down slightly.
Bake until done, about 10 to 12 minutes.
Cool on racks.
Makes four dozen cookies.
