1 1/3 cup all-purpose flour.
1/2 cup unsweetened cocoa powder.
1 1/2 teaspoons baking powder.
1 1/2 teaspoons baking soda.
2 teaspoons salt.
3/4 cup packed dark brown sugar.
1/4 cup cinnamon apple sauce.
1 egg.
1 egg white.
1 tablespoon oil.
1 teaspoon vanilla extract.
2/3 cup skimmed milk
powdered sugar, optional
Method:
Preheat the oven to 350° Fahrenheit.
Line 12 muffin cups with paper liners are.
Combine the flour, cocoa, baking powder, soda and salt
beat the dark brown sugar, cinnamon, egg, egg white, oil and vanilla extract until combined.
Stir in the flour/cocoa mixture and alternate with milk until just combined.
Pour the batter into muffin cups.
Bake for 22 to 25 minutes or until toothpick comes out clean.
Remove the cupcakes from pan; cool on a wire rack for 30 minutes.
